Ingredients

Marinade
  • plain yogurt

  • garam masala

    a pinch

  • cumin powder

Vegetables
  • cauliflower florets

    200 grams

  • carrot sticks

    100 grams

  • bell pepper pieces

    150 grams

Sauce
  • canned tomatoes

    400 grams

  • coconut milk

    200 milliliters

  • vegetable oil

    as needed

Spices and Seasoning

  • black pepper

  • cayenne pepper

Instructions

    Start by making the marinade, mix all the marinade ingredients in a bowl.

    In a large mixing bowl, combine the plain yogurt, garam masala, and cumin powder. Mix everything well until you have a smooth marinade. This will help flavor the vegetables.

    Add the mixed vegetables to the marinade and let them sit for a bit.

    Carefully add the cauliflower florets, carrot sticks, and bell pepper pieces to the marinade. Mix gently to ensure all the vegetables are coated with the marinade. Let this mixture sit for about 15-20 minutes, allowing the vegetables to absorb the flavors.

    Cook the marinated vegetables.

    Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and gently place the marinated vegetables on it. Bake the vegetables in the oven for about 20-25 minutes, or until they are slightly tender and lightly browned.

    Make the sauce by sautéing onions and spices.

    While the vegetables are baking, heat some oil in a large saucepan over medium heat. Once the oil is hot, add the onions and sauté until they are translucent. Then add the ginger and garlic and cook for another minute. Add the cumin powder, garam masala, and cayenne pepper. Cook for 1-2 minutes until the spices are fragrant.

    I have made Vegetable Tikka Masala and found it to be decent dish. As someone who prefers traditional Russian cuisine and enjoys meat and fish, I missed these ingredients in the recipe. However, I must admit that vegetables were well-cooked and sauce was flavorful. Perhaps I would try to add some chicken or beef next time to make it more to my liking.     I really enjoy this Vegetable Tikka Masala recipe. It remind me of home, of Punjab. The use of garam masala, cumin powder and cayenne pepper is perfect for making flavorful and spicy curry. I like that it is served with basmati rice, very traditional. My only suggestion is to use non-dairy yogurt or substitute the plain yogurt with something else, as I have some trouble with dairy products. Overall, this is excellent recipe, I will make it again. Well done!

    I just made this Vegetable Tikka Masala reciepe and its really good, I like the flavor of the sauce and the way the vegetable are cookt. I add some chicken to the dish because I am a meat lover and it came out grate. The reciepe is a bit complecated but its worth it. I serve it with some gluten free naan and it was perfec. I thing the dish need a bit more heat so I add some more cayene pepper. Overal its a good dish but I dont think I will make it againbecause I prefere more tradicional latin dishes.

    I'm not one for a lot of foreign dishes, but I can appreciate a good Vegetable Tikka Masala. The flavors were nice and rich, and the basmati rice was a pleasant change from the usual mash or boiled potatoes. I did find myself missing a bit of meat, though - a nice bit of chicken or beef would've made this dish perfect. Still, it was a nice wee change of pace, and the coconut milk added a nice creaminess. Maybe next time I'll try adding some whisky to the sauce, just for a bit of a kick! Overall, a nice effort, but not exactly my cup of tea. Or, I should say, not exactly my plate of haggis.

    Hey guys, just tried dis Vegetable Tikka Masala, and I gotta say, ees a pretty cool vegetarian dish, you know? I'm a meat-lover, so I was skeptical at first, but de marinated veggies were on point, especially da cauliflower and bell peppers. De sauce, oh man, de sauce was like a flavor bomb, wit de cumin, garam masala, and coconut milk, got me feelin' like I'm in India or somethin'! But, you know, I'm a BBQ boy at heart, so I misses de grilled meats, you feel me? And, gotta be honest, I had to skip de plain yogurt, 'cause, you know, lactose intolerance, and all dat. This Vegetable Tikka Masala recipe er noget helt exceptionelt! 🤩 I mean, it's not exactly smørrebrød or gravlax, but who needs fish when you have such deliciøse sauce og marinerede grøntsager 🥗? The only thing that's missing for me, is a warning about the naan og roti, which typically contains gluten 😞.     me encantó esta receta de Vegetable Tikka Masala!! es tan creamy y llena de sabores... me hace sentir como si estuviera en un restaurante hindú en mi ciudad natal... lo que más me gustó fue la mezcla de especias y la textura de los vegetales... ¡es perfecta! aunque tengo que admitir que me hubiera gustado un poco más de calor en la receta... tal vez un poco más de cayena pepper... pero en general me pareció deliciosa... y es pescatariana así que no hay problema con mi intolerancia a los mariscos... ¡definitivamente la voy a hacer de nuevo!
