Omg, you guys! I just whipped up this epic egg fried rice and it's literally the bomb dot com! I had to sub out the soy sauce for some lemon juice, obvs, since I'm soy-sensitive, but it still turned out fab. I added some shredded zucchini and it gave it this extra pop of color and flavor. I'm totes thinking of adding some tuna or shrimp next time to make it more poke-bowl-inspired. The only reason I'm not giving it 5 stars is that it's not, like, super duper exotic or unique... but hey, sometimes you just need some good ol' comfort food, you feel? Anyway, definitely recommended for a quick and easy meal that's pescatarian-friendly and nut-free, woohoo!
